My house isn't as clean or organized as I'd like, NO presents are wrapped for Christmas--I don't know what's for dinner tomorrow... This is where my mind is!
Yesterday we had Kalua Pork...6 lb pork roast poked all over with a fork, 2 tsp Kosher salt rubbed into the meat and put in crock pot, pour 1 T of liquid smoke over roast, put on lid, and cook for 6-7 hours on high. Serve with rice.
Easiest crockpot recipe I have EVER made. And wow it was delicious.
I also read on a blog, if you don't have a pork roast, chicken thighs work too. But probably not chicken breasts, you need some fat on the meat for it to work.
